Seitan Waldorf Salad

 

1/2 cup  walnuts chopped
1 stalk  celery thinly sliced
1/2 cup  red grapes halved
1/2 cup  raisins
2  apples diced
8 oz  WestSoy Cubed Seitan, cut into bite size chunks
oil, enough to sautee
Dressing:
1/2  lemon, for juicing
salt & pepper to taste

Season ground seitan with salt and pepper – sauté in frying pan till browned.

In large bowl, add chopped walnuts, sliced celery, red grapes – halved, raisins, diced apples, seitan.

Blend in Mayonnaise and lemon juice.

Serve in a half, hollowed-out pineapple.
