Seitan Quesadilla


1  small onions, sliced
1  green bell peppers, julienne
1 jar  salsa
1 tub  guacamole
8 oz  sour cream
Oil (enough to sautée with)
1 pack  soft tortillas
1 lb  shredded Mexican cheese

Sautee strips of seitan in frying pan with oil.

Set aside.  Sauté onions and green bell peppers. 

Set aside.  Heat tortilla in pan – add several strips of seitan, onions, green bell peppers, cheese.  Fold in half – grill both sides – till cheese is melted.

Cut in quarters.  Add favorite topping mixture: salsa, guacamole and sour cream.
