Manicotti with Seitan

 

1 box  Manicotti
8 oz  Ricotta cheese
1 bottle  Spaghetti sauce
1 lb  Mozzarella cheese shredded
Oil (enough to sautée with)
1/4 tsp  Garlic powder
1/4 tsp  Onion powder

Cook manicotti according to directions.

Season ground seitan with garlic and onion powder.  Sauté in cup of spaghetti sauce.

Mix Ricotta cheese, 1 cup of shredded mozzarella and seitan mixture together in bowl. 

Stuff manicotti shells with cheese mixture. Place in ovenproof pan. Pour remainder of spaghetti sauce over the manicotti. Top with fresh mozzarella cheese. Bake in oven 375°F till cheese is melted.
