Curried Tempeh Salad

3/4 cup  chopped celery
1/2 cup  chopped pecans or walnuts
1/2 cup  golden raisins
1/4 cup  chopped green onion
1 pkg  WestSoy Original Soy Tempeh cut in cubes
1/2 cup  plain yogurt
1 Tbsp  mayonnaise or non-fat sour cream
2 Tbsp  Dijon mustard
4 Tbsp  curry powder (or to taste)
salt and pepper to taste

Mix the chopped nuts, raisins, onion, celery and cubed tempeh in a large mixing bowl. In another smaller bowl, add together the soy yogurt, mayonnaise, mustard and spices. Mix well and add to the large mixing bowl. Incorporate all the ingredients by folding the yogurt mix into the chopped ingredients until everything is fully covered by the yogurt mixture. Serve on fresh sourdough bread for a sandwich or serve cold as a side dish.
