Chicken Style Salad

Servings: 6 servings

Deceptively simple, this fabulous salad can be enjoyed on a bed of lettuce or as a sandwich filling.

3/4 cup  soy mayonnaise
1/2 tsp  chopped fresh lemon thyme
1 (18 oz.) package  WestSoy Chicken Style Seitan, chopped into bite-size pieces
1  medium stalk celery, diced
5  green onions, sliced
5 tsp  capers
5  sweet red bell peppers, diced
3 Tbsp  fennel, chopped
2 oz  pecans, chopped
Salt to taste

Combine the lemon thyme and mayonnaise. Place in a covered container and refrigerate for at least 1 hour. Combine with all of the remaining ingredients. Mix and add salt to taste.
